Recipe: Roasted Cauliflower and Aged White Cheddar Dip

Roasted Cauliflower and Aged White Cheddar Dip pic

INGREDIENTS:

  • 1 head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 6 ounces cream cheese, room temperature (or the whole bar for a creamer taste)
  • 1/2 cup sour cream
  • 1 tablespoon thyme (I used powdered but you could use fresh)
  • 1 tablespoon garlic powder (or you could use fresh garlic)
  • 1 cup aged white cheddar
  • salt and pepper to taste

DIRECTIONS:

Toss the cauliflower in the oil with salt and pepper, arrange in a single layer on a baking sheet and bake at 400F until lightly golden brown, about 20-30 minutes.

Puree cauliflower and the rest of the ingredients in a food processor and pour into a baking dish.

Bake at 350F until the top is lightly golden brown, about 20-30 minutes.
