Recipe: Cookie Dough Bites {No Eggs, No Baking}

Cookie Dough Bites that are bake free, egg free and easy o make?  Yes, they exist! You can whip up these cookie dough bites in just  a few minutes and enjoy them in less than an hour.  All you need are a few ingredients and a refrigerator and they are ready.  These make a perfect summer treat for when you don’t want to heat up your kitchen!

Cookie Dough Bites -INGREDIENTS:

  • 2 Sticks Butter (I used No-Salt, Sweetened which is what I had)
  • 1½ cups packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 6 ounces miniature chocolate chips

DIRECTIONS:

Cream butter and sugar together.

Add remaining ingredients and mix well — use your hands if need be.

Roll into 1-inch balls.

Refrigerate until firm, about 30 minutes.

Store in the refrigerator.

Optional: Dip or drizzle with chocolate.

  • I love this for a couple reasons! One it looks delicious but I also love that it doesn't have eggs because one of my kiddos has an egg allergy! Thanks for the yummy recipe! I'm going to pin this!

  • omg no eggs and really easy to make vegan! Also, I occasionally eat raw sprouted wheat berries and I've never noticed any symptoms of improper digestion.

  • I saw the recipe and was intrigued. By following the comments I learned something more, even without a definite answer, it was still interesting.

    • They are, I am thinking they would be fabulous in a vanilla milkshake too :) But I am worried about the whole ingesting flour thing someone else left a comment about.

      • Maybe look into it but wouldn't the stuff they sell, like ice cream etc with cookie dough have to be safe....?

        • That is what I was thinking. I did read a few articles (and Bakerella even mentioned it) and it seems that there is no definite answer if eating raw flour is bad for you - mainly it seems to be the eggs but luckily this has no eggs :)

  • I am assuming from this recipe and post that the idea here is to eat the cookie dough raw and not cooked. If that is not so, please ignore the remainder of this comment.

    From my earliest days of cooking (been married 55+ years so I've been cooking a long time), it was my understanding that eating UNCOOKED flour products was not encouraged because the body could not digest the flour. This has to do with the gluten, enzymes, etc. While it wouldn't hurt most folks to taste a small amount, consuming more (such as eating several of the 'raw cookies' in the recipe above) might be cause for concern.

    I am no authority, just a cautious individual. Do I taste the gravy thickened with flour before it has cooked the recommended 5-minutes? Yes. Do I taste a pinch of pie crust dough, etc while it is raw - I have been known to do so? Did I get sick? No. But I am suggestion that before you begin giving kiddies cookies that are uncooked (even if they don't contain raw eggs) you think again that it might not been digested adequately.

    • Thank you for letting me know! I had no clue about the flour, I thought it was safe with no egg! Luckily my boys didn't even like it! I will have to do some research on that!
