Quaker Oats + Milk = Pancakes & Tweet For a Cause #Ad #BetterTogether

A few weeks ago I shared how I have switched back to using milk with oatmeal with my family and I made some awesome 3 Minute No Bake Cookies.  It was a no-brainer to switch back to milk from water as using milk adds protein, potassium, vitamins D, A and B12, which you don’t get if you just use water.  Oatmeal is a such a versatile ingredient and I use it way more often than I realized and I am not just talking about plain oatmeal for breakfast.  I use Quaker oats when I bake, to top off my side dishes and recently I discovered I could even use it to make pancakes!  I feel like we are always running out of pancake mix in my house and with one child who has an egg allergy I can’t buy just any ole’ pancake mix anyways.  A lot of the pre made mixes contain egg already so I can only buy certain brands.  As I was staring in my pantry at my canisters of Quaker Oats I decided to head to the computer to see what else I can make with them.  I never even thought about using them in pancakes but really its a great and healthy idea!  I love that I can control what goes in the mix, and if my youngest son is going to have some then I will just use Egg Replacer instead of an egg.

Favorite Oatmeal Pancakes

Ingredients:

  • 1-1/4 Cups all-purpose flour
  • 1/2 Cup Quaker® Oats (quick or old fashioned, uncooked)
  • 2 Teaspoons Baking Powder
  • 1-1/4 Cups milk
  • 1 Egg, lightly beaten (or Egg Replacer substitute)
  • 1 Tablespoon vegetable oil
  • 1/2 cup semisweet chocolate chips (you could also mix in fresh or frozen blueberries, bananas or apples)

Directions:

  • Combine flour, oats, baking powder and salt; mix well.
  • Combine milk, egg and oil; blend well.
  • Add to dry ingredients to wet ingredients; stir just until dry ingredients are moistened. (Do not overmix)
  • Add in the chocolate chips (or other mix-in); mix gently.
  • Heat skillet over medium-high heat
  • Lightly grease skillet. For each pancake, pour 1/4 cup batter into hot skillet. Turn when tops are covered with bubbles and edges look cooked. Turn only once.

My kids absolutely loved them and I love that I have another use for Quaker Oats.  I have a feeling these are healthier too than the ones I was buying as well.   These are seriously our new favorite pancakes, my kids call them “monster pancakes” because they are big and hearty!  I found this recipe on the Quaker website and there are more inspiring ideas at:  http://bit.ly/QuakerBT
