5 Recipes to Transform Your BBQ Leftovers into a Delicious Meal

If you’re anything like us, then you love a good BBQ. But sometimes, after all the cooking is done and the burgers are eaten, you’re left with a bunch of leftovers. Don’t let those leftovers go to waste! 

Just because the cookout is over, doesn’t mean your leftovers have to be boring! With a little creativity, you can turn last night’s Barbecue into a whole new meal. Here are 5 recipes to help you do just that.

1. Spaghetti and Meatballs

One of the best things about beef burgers is that they can be easily transformed into other quick and  easy to follow beef recipes. If you’re looking for a delicious way to use up leftover beef patties, why not try your hand at making meatballs and spaghetti? 

The first step is to finely chop the beef patties. You can do this by hand, or alternatively, pulse them in a food processor until they’re finely minced. Next, add breadcrumbs, an egg, and your favorite seasonings to the beef and mix everything together thoroughly. 

Once the mixture is well combined, use your hands to roll it into balls. If the mixture is too sticky, add a little more breadcrumb until it’s a workable consistency. Then, all that’s left to do is cook the meatballs in your favorite sauce. Delicious! 

And thanks to your bbq leftovers, this dish didn’t cost you a dime.

2. BBQ Chicken Quesadillas

This one is super easy and only requires a few ingredients. First, shred the chicken into small pieces. Then, add some BBQ sauce to the chicken and mix it around so that all of the pieces are coated. 

Next, warm up a tortilla in a dry skillet over medium heat. Once it is warmed, add half of the chicken mixture to one side of the tortilla and fold it over. Cook for about two minutes per side, or until the tortilla is golden brown and crispy and the chicken is warm. 

Serve with ranch dressing or your favorite dipping sauce. Enjoy!

3. One-Pot Shakshuka

Looking for a creative way to use up those leftover grilled vegetables? Why not try making a one-pot shakshuka? This dish, originating from the Middle East, is traditionally made with eggs poached in a tomato and pepper sauce. 

However, there’s no reason why you can’t get creative with your ingredients. Eggplant, tomatoes, peppers, and zucchini all make great additions to a shakshuka. Simply start by sautéing your vegetables in a large pan. 

Once they’re softened, add in some tomato sauce and spices like cumin and paprika. Crack a few eggs into the pan, cover, and let cook until the whites are set and the yolks are still runny. Once finished, top with fresh herbs like parsley or cilantro and serve hot with some crusty bread for dipping and enjoy!

4. Grilled Corn Fritters

Corn fritters are a delicious way to use up leftover grilled corn on the cob. They are easy to make and can be served as a side dish or main course. To make them, simply combine 2 cups of cooked corn kernels, 1/2 cup of all-purpose flour, 2 eggs, and 1/4 cup of milk in a large bowl. Season with salt, paprika, parsley, and garlic salt.

Mix well and then scoop the batter by the tablespoon onto a hot griddle or frying pan. Cook for 2-3 minutes per side or until golden brown. Serve with sour cream or your favorite dipping sauce. Enjoy!

5. Pulled Pork Tacos

If you’ve got leftover BBQ pork, then you’re already halfway to a delicious pulled pork tacos dinner. Simply shred the pork and mix it with your favorite taco seasoning. Then heat up some tortillas and you’re ready to go.

Top with some pico de gallo, guacamole, cilantro, and some lime. For an extra special twist, try using mango salsa as a topping. The sweetness of the mango pairs perfectly with the savory pork and spice of the taco seasoning. Yum!

These are just a few ideas to help you turn your leftovers into a delicious meal! With a little bit of creativity, you can turn even the most simple ingredients into something special that your whole family will enjoy. So next time you find yourself with some extra BBQ chicken (or any other leftovers), don’t be afraid to get creative in the kitchen!
