Sweet & Sour Chicken with the Del Monte® Veggieful™ Riced Cauliflower Teriyaki

We are a busy family of five as are many other families making it through each day. From work to multiple sports to different schools, we are constantly moving. Most nights are busy and quick meals on the go. I am not someone who enjoys hours of cooking and like meals that are easier but still delicious. Who says quick meals can’t be as delicious as those that take hours?

Well, sweet and sour chicken is one of our family favorites but we don’t eat it often enough. I usually buy a frozen version of the chicken but this time I wanted to find a way to create it at home that would be more flavorful. I had no idea how easy it was to make sweet and sour chicken but really it is just a few ingredients to make the sauce and then some chicken breasts. After coming up with the sweet and sour sauce, I had to come up with a side that normally would have been plain white rice. My family has begged for more flavor and to try new things so I was excited when I came across Del Monte® Veggieful™ Riced Cauliflower Teriyaki in the freezer section at my local grocery store.

I have always been a fan of Del Monte fruits and vegetables so I knew this would be a hit as well. I love the convenience of their products and that they don’t sacrifice quality for flavor. The Del Monte® Veggieful™ Riced Cauliflower Teriyaki heats up quickly in the microwave (or you could cook on the stove) for a quick side dish to your main entree. It has no artificial flavors or preservatives and the veggies used are picked at their peak. Frozen riced cauliflower and broccoli plus pineapple, peas, carrots and a sweet and savory seasoning so yeah way better than plain white rice. Plus, this is a healthier and more flavorful way to enjoy rice without the guilt of more calories.

Sweet and Sour Chicken

Ingredients:

  • 1.5 lb Chicken Breasts cut up into cubes (about 3-4 usually depending on their size)
  • 1/2 cup Brown Sugar
  • 1/2 cup Apple Cider Vinegar
  • 1/3 cup Ketchup
  • 4 teaspoons Soy Sauce
  • 2 teaspoons Minced Garlic (or garlic powder – I love garlic so tend to use a lot of it)
  • Cilantro (optional)
  • Del Monte® Veggieful™ Riced Cauliflower Teriyaki for your side – I used 2 bags for my family

Directions:

  • Saute chicken in a non-stick pan for a few minutes until cooked thoroughly (165F)
  • While the chicken is cooking, mix up the rest of the ingredients to create the sauce.
  • Pour sauce in with the chicken and simmer until it thickens and the sauce coats the chicken nicely. You could add corn starch if it is not thickening up and is too runny but I didn’t need to.
  • Serve this on the side of or on top of some heated Teriyaki Veggieful Rice
  • Top with some cilantro you shred on top of your dish for extra flavor

My family of five does not agree on a lot of dinners but this one was a hit and has now been added to our rotation. I love how all the ingredients I usually have on hand and the Veggieful Rice is easily stocked up on and stored in my freezer for when I need it.
