As a mom of five, which includes three busy and constantly hungry teenagers, I am always looking for ways to save. Whether I am saving time by carpooling or saving money on groceries, I am all about saving where I can. With my kids all being in sports, which take up every single weeknight and most of our weekends, I have started also to find ways to save time in the kitchen.
I am not someone who enjoys hours of cooking, nor do I have time for that, but I still want delicious food. Who says meals can’t be as delicious as those that take hours?
Rice and meat are two staples in my house. We tend to eat a lot of different varieties of rice and either top it with some type of meat or serve on the side. With growing teenagers at home who are always starving I tend to bulk up any meals I can so there is a lot of protein and variety.
Jambalaya is something I have always enjoyed and I love how it is a dish that you can really throw anything in. Some people enjoy seafood in there while others use a variety of meats. I tend to make it different each time depending on what I have on hand. Lately, we have been on a Latin-inspired kick, so I thought it would be great to make it more of a paella-type dish. Paella is one of the best-known dishes in Spanish cuisine that is actually the name of a shallow traditional frying pan. It is similar to jambalaya but usually use more Latin-inspired ingredients and spices.
Usually I would use rice from a box mix but when I saw Del Corazón Chicken Adobo Rice in the freezer section at my local grocery store I knew I had to try it. As I said, I am all about shortcuts and saving time in the kitchen and this frozen entree was going to be perfect to start with. No time wasted cooking and cutting up chicken or vegetables or searching for spices.
Del Corazón Chicken Adobo Rice is an entree that can be eaten on its own thanks to the hearty chicken and jam-packed flavors. It is a white rice blended with white chicken meat, onions, peppers, and adobo seasoning.
I decided that to make it heartier for my family and a more complete meal, I was going to add in some chorizo and shrimp to make it more of a paella. Using the package saved me so much time since the preferred method of cooking it is actually just five minutes in the microwave! You can pan fry it but honestly, it tastes perfect right out of the microwave thanks to the self-venting bag it cooks in. Each entree serves about three cups of rice.

Directions:
Depending on how many people you are feeding, determine how much of the rice entrees you need. I used three of them since my family of five eats a lot and I like leftovers for lunch the next day.
Start cooking the rice in the microwave since each bag will take five minutes.
Cook Chorizo in a pan as the directions on the package state, do not drain.
Cook shrimp in another pan if you prefer to keep it separate or in an air fryer which I did since two of my family members do not like shrimp. I used our air fryer and seasoned the shrimp with olive oil and some taco seasoning.
Once the chorizo is done, pour in your Chicken Adobo Rice packages and mix it up. You can add in the shrimp as well if you want or keep it separate so it can be added to those that want it.
My family of five does not agree on a lot of dinners but this one was a hit and honestly it took me probably 15 minutes to put together. I love that I can have everything on hand in the freezer for when I am short on time or just have a taste for this dish! I also loved not having so many dishes as I only used two pans, no cutting boards or pots! My kids even asked for me to buy the Chicken Adobo Rice for stand alone meals for times we can’t have a family meal together due to their sports times or if they don’t like something I made.
I honestly am so glad I tried this frozen entree and cannot recommend it enough!
