I have wrote about my barely there cooking skills, but with money being tight now especially with the holidays coming up, I am trying to cook more. My problem though is with two kids who are the most active in the afternoon; it is hard to prepare a nice dinner. So dinnertime for us is usually me piecing together a meal as my husband walks through the door or having him pick something up. We also have about the same 10 meals constantly, so we definitely need a change in our meal selection.
Well thanks to the book “Make-Ahead Meals For Busy Moms” by Jane Doiron, dinnertime has come to be something that I no longer dread. In Jane’s book she breaks it down in to Appetizers, Breakfast & Brunch, Dessert, Main Dishes, Side Dishes, and Soup. She also includes a Helpful Tips and Measurement Equivalents section. The book even includes a recipe index so you can quickly find your favorites.
What I love about Make-Ahead Meals is that all the recipes include instructions to make the meals a day ahead and freeze if possible. Her recipes are all easy and use normal ingredients. By normal ingredients I mean some of the items I actually have. I hate when recipes call for ingredients that I don’t even know what they are, let alone where to find them!
I am super impressed with the recipe selection too in the book. As a picky eater, I am not usually open to trying new things, and this book contains so many meal ideas that I would actually eat. I haven’t yet made a meal ahead, but I have made a few for dinner (yes I found the time) and our favorite is her Chicken and Spinach Stuffed Shells recipe. I love the idea though of making meals ahead to save time and money. The author also words it best by saying “Imagine opening your freezer to pick our a family favorite appetizer, main dish or dessert, and all you have to do is thaw and heat it!” The only drawback to the book is there are no pictures, which I usually rely on, but the quality of the recipes makes up for it!
Overall, this book is a new favorite of mine and I highly recommend checking it out. Oh and did I mention the author is of course a mom who also leads a busy life! It would also make a great gift for Christmas!
