Creamette Comfort Food Recipe, Garlic Shrimp & Noodles

Through May 30th, Creamette Pasta is hosting the “Comfort Food Recipe and Essay” contest.  Families from the Midwest region are asked to share their favorite comfort food recipe made with Creamette Pasta along with an original essay of 100 words or less explaining their family mealtime memory as it relates to the recipe and what makes it so comforting.  In June 2013, ten semifinalists will be chosen to participate in a nationwide online vote for a chance to win $10,000!

For me pasta in general is a comfort food and I can’t get enough of it.  I forgot how good Creamette noodles were and I definitely found myself a new comfort dish by re-creating one of the Creamette Recipes from their website.

Garlic Shrimp and Noodles

Ingredients:

• 1 pkg cooked Creamette Egg Noodles
• 2 tbsp olive oil
• 3 tsp garlic, minced
• 1-1/2 lbs small shrimp, cleaned
• 1/2 cup Parmesan cheese, shredded
• 1 cup green onion, chopped
• 1 tbs parsley, chopped

For the dressing:

• 1/2 cup of olive oil
• 1 tsp of garlic
• lemon juice from 1 lemon (I ended up using 1.5 lemons as 1 lemon wasn’t enough)
• Parmesan cheese (I used grated because that’s all I had but you can use fresh parmesan)

Directions:

• Cook pasta according to directions, set aside.
• Sauté 2 tbsp of olive oil over medium heat.
• Add 3 tsp of garlic and saute about 1 minute.
• Add the shrimp and cook until pink and thoroughly cooked.
• Let the shrimp cool off.
• Combine pasta with cooled shrimp.
• Top with green onion, the dressing (mixed from the ingredients above) and parsley.
• Let cool in refrigerator about 1/2 hour for the salad to season!

First I had to choose which size noodles, I ended up choosing Medium Egg Noodles for this dish.
