My husband and I are not Italian but for whatever reason we love Cannoli-anything. Our wedding cake actually had cannoli cream filling inside, so when I saw this recipe for Cannoli Stuffed French Toast I knew it was the perfect dish to hint to my husband to make me for Valentine’s Day. I will warn you that it is very rich and filling, but it is also so delicious! I did forget to dust with powdered sugar, but honestly it was because I was salvaging at the mouth to eat it!
Ingredients:
1 cup ricotta cheese
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
1/3 cup semi-sweet chocolate chips (mini works best but we only had regular)
2 large eggs
1/4 cup milk
4 slices bread (the thicker the better – we only had regular bread on hand and it still worked, but did get a little soggy)
2 tablespoons butter
Additional powdered sugar for dusting before serving
Directions:
Combine the ricotta cheese, powdered sugar, vanilla extract and mini chocolate chips. Set aside.
In another bowl, whisk the eggs and milk together. Spread 2 slices of the bread with the ricotta mixture, about 1/2 cup per slice, and top it off with the other slice of bread. Carefully dip both sides of each sandwich into the egg mixture until well coated. Using a big slotted pancake flipper worked great for this.
In a large skillet, melt the butter. Add the french toast sandwiches one at time and cook until golden, about 4-5 minutes. This recipe makes two french toast sandwiches which may not seem like a lot, but again they are very rich and most people can probably only each eat one!
Dust with powdered sugar and serve!
