No More “FOUP” with Tasteful Selections Potatoes {Blue Cheese Potato Salad Recipe}

Potatoes to me are such a versatile food.  They can be boiled, mashed, baked, grilled, roasted, diced, you name it you can pretty much do it.  Well Tasteful Selections are a brand of potatoes that come in several varieties perfect for whatever your need may be.  They also help with fear of FOUP.

 Features of Tasteful Selections:

  • Pre-washed, ready-to-cook with no scrubbing
  • Tender skins so you don’t need to peel them first
  • Small and consistent in size so potatoes cook quickly and evenly
  • Several varieties such as Honey Gold (buttery and sweet), Ruby Sensation (light and fresh) and  Sunrise Medley (sweet and nutty)

I love potatoes, probably too much, but honestly I hate cooking them.  They take forever to peel, they don’t seem to cook evenly and I usually need to dice them up to eat them.  I also don’t usually buy potatoes because they are usually sold in those giant 5-10 lb. bags and I don’t need that many potatoes.  I like convenient, affordable, high quality potatoes and Tasteful Selections has made it easy for my husband and I to not only enjoy potatoes but eat them more regularly!  I even came up with a delicious Summertime recipe that I have already made a few times now!

Blue Cheese Potato Salad with Tasteful Selections Potatoes

Ingredients:

  • 1 whole bag of Tasteful Selections Potatoes (I used Sunrise Melody but I am sure any variety would be fine)
  • 1/2 bunch green onions
  • 4 ounces blue cheese crumbles
  • 1 cup sour cream
  • 1 cup plain Greek yogurt
  • 1/2 cup real crumbled bacon (I used the pre-packed crumbles but you could could it fresh and crumble it yourself)
  • Olive oil

Directions:

  • Dice all the potatoes in half or how ever small you’d like them (or don’t cut them at all!)
  • Toss in a bowl with drizzle of Olive Oil and then spread on a baking sheet to Bake in oven at 425 for about 15 minutes.  I do this so they are not mushy and so they hold up with the yogurt and sour cream mixture.
  • Let the potatoes cool
  • Put potatoes and the rest of the ingredients in a bowl and mix
  • This can be made the night before (I think it tastes better if it sits overnight) but I have also made it right before a party and its good.
  • Top with extra green onions if you’d like
  • Serve cold

Notes:  As will all my recipes, feel free to modify them according to your tastes.  Want more bacon?  Then add some!  Don’t like sour cream?  Use less or even try just the Greek yogurt as a base.
