Recipe: Beef with Sun-Dried Gorgonzola Alfredo

Ingredients:

  • 1 lb. Beef Stew Meat
  • Olive Oil (to cook beef)
  • 1 box of pasta (your choice)
  • 2 cups milk (or heavy cream)
  • 1/2 cup butter (1 stick)
  • 1 cup shredded parmesan cheese
  • 4 oz. gorgonzola cheese
  • 3.5 oz. package of Sundried Tomatoes (just over 1 cup)
  • 1 tablespoon basil (I used dried, but fresh would probably be better)
  • 2 cups Spinach

Directions:

  • Cook pasta as directions indicate, set aside.
  • Cook Beef with Olive Oil in a pan until cooked thoroughly, set aside.
  • Cook sauce in another pan – mix together milk, butter, parmesan cheese, gorgonzola cheese, sundried tomatoes, basil and spinach.
  • To serve, top pasta with beef and then sauce.

Notes:

  • If you don’t want meat, then leave it out.  It is just as good!
  • Mine didn’t thicken so I ended up using corn starch to thicken up. If you have heavy cream that might work better, but I only had 2% milk.
  • If you want more cheese or less spinach, then of course act accordingly.
