Recipe: Beef with Sun-Dried Gorgonzola Alfredo
Ingredients:
- 1 lb. Beef Stew Meat
- Olive Oil (to cook beef)
- 1 box of pasta (your choice)
- 2 cups milk (or heavy cream)
- 1/2 cup butter (1 stick)
- 1 cup shredded parmesan cheese
- 4 oz. gorgonzola cheese
- 3.5 oz. package of Sundried Tomatoes (just over 1 cup)
- 1 tablespoon basil (I used dried, but fresh would probably be better)
- 2 cups Spinach
Directions:
- Cook pasta as directions indicate, set aside.
- Cook Beef with Olive Oil in a pan until cooked thoroughly, set aside.
- Cook sauce in another pan – mix together milk, butter, parmesan cheese, gorgonzola cheese, sundried tomatoes, basil and spinach.
- To serve, top pasta with beef and then sauce.
Notes:
- If you don’t want meat, then leave it out. It is just as good!
- Mine didn’t thicken so I ended up using corn starch to thicken up. If you have heavy cream that might work better, but I only had 2% milk.
- If you want more cheese or less spinach, then of course act accordingly.
