One of my favorite traditions over the holiday season is making cookies together as a family. My husband and I started the tradition together before kids and have continued it ever since. Something about playing Christmas music and baking all day just feels like home and family to me. We actually have family members who request their favorites and would be upset if they didn’t get their homemade cookie tin!

We all have our favorite cookie recipes and each year we add one or two new ones. Usually we wait until the week of Christmas to get baking since that is when break starts for my kids and then the cookies are fresh to hand out, but this year we decided to try out a new recipe early.

I am a firm believer that cookie recipes should be short and simple. Since we tend to bake a bunch of varieties I look for simple recipes that are easy to follow yet still delicious. Simple ingredients like Country Crock are perfect to create uncomplicated cookies. Country Crock is made from delicious oils, purified water and a pinch of salt. From the mashed potatoes to dinner rolls, Country Crock can really be whipped into any recipe.

Our new recipe this year started out with the Country Crock Holiday Cookies Recipe and we added in our Mix Ins of choice which happened to be candy canes and white chocolate chips.

White Chocolate Candy Cane Cookies Using the Country Crock Holiday Cookies Recipe:

Ingredients:

  • 1 cup Country Crock® Spread
  • 3/4 cup Granulated sugar
  • 3/4 cup Firmly packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp. baking powder
  • ¾ tsp. salt
  • ¼ tsp. baking soda
  • Choice of Mix Ins – we used 1 cup of crushed candy canes and 1 cup of white chocolate chips

Directions:

Preheat oven to 375°. Mix Country Crock® Spread, granulated sugar, light brown sugar, egg, egg yolk and vanilla in large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended. (Dough will be soft and creamy.)

Add your favorite mix-ins until every spoonful of dough has some of the delicious mix-ins you choose.

Drop dough by rounded tablespoonfuls on un-greased baking sheets 3-inches apart.

Bake 10 to 12 minutes until edges are lightly golden. Cool 1 minute on wire rack; remove from sheets and cool completely.

My trick for getting 1 cup of butter was to just scoop it out with a measuring cup and a spatula!
