Here in Chicago, we take advantage of every nice day we get because you never know if its going to crazy hot or crazy cold the next day. I’ve seen all four seasons in one week here! So nice weather here means grilling and grilling means salads. While my husband is the meat guy, I am the salad lady and love coming up with new salads.

Now I am not a mayo lover but most salads, especially potato ones, call for mayo.  I have found a perfect replacement that is actually better than the mayo I would have had to use. DairyPure Sour Cream is made with fresh cream and milk from their own dairy, which makes it All Natural Sour Cream.

So when my husband tackled grilling this past weekend, I challenged myself to create a new salad. I was craving buffalo wings and my husband wanted potato salad so I figured why not combine the two! My creation turned into Buffalo Chicken Potato Salad and was whipped up with DairyPure Light Sour Cream. Buffalo Chicken Potato Salad

Ingredients:

• 1 container DairyPure Sour Cream (either All natural or Light)
• 1 bag of small potatoes cut in half
• 1 bunch of green onions diced
• 1 container of blue cheese crumbles
• Hot Sauce – remember a little goes a long way so taste test as you add it
• Chicken – either a rotisserie chicken, chicken strips or chicken breasts cut up

Directions:

• Mix potatoes and olive oil in a bowl then spread out on a tray to bake at 425 for 15 minutes. This gives them a crispy and roasted texture in the salad.
• Cook chicken as needed – you can also use a rotisserie chicken and just shred it. I bought grilled chicken strips and cooked them right along side my potatoes.

• Let potatoes (and chicken) cool.
• Mix all ingredients together!
• Let chill in the fridge for a few hours if you can but the salad is also good right away!

I can honestly say, no one has ever noticed that I was not using mayo in my salads. Actually, I have received many compliments on how creamy and light my salads are when I do use DairyPure Sour Cream!
