Although 2020 has been tough in some ways, we have still managed to enjoy the summer months in our own ways. Now, into fall and winter, the joy can continue with seasonal recipes to keep the spirits lively. Even if we can’t yet meet up in person in some places, there are no shortage of opportunities to enjoy nature walks in the changing landscape, and cosy nights-in with the family. Whether you are locked down or not, here are five recipes to try this fall.
OK so this one is more of an annual favorite than one especially for 2020, but no fall recipe list can do without it. The good news is you don’t have to dawn a mask and brave an outside coffee shop; you can make it easily from the comfort of your home. Picture cozy nights in with warm socks and pumpkin spice coffee as the rain falls outside. What you’ll need is allspice, cinnamon, and fresh coffee beans. Fall is not fall without Pumpkin Pie. The warm crusty base and allspice filling are enough to make the mouthwatering and wish pumpkin was available all year round. This seasonal classic is also simple to make and can be presented after a formal meal, brought to a seasonal party, or enjoyed in the evening if you have your child custody. First make the base by rolling out pastry and baking it in a tray, then combine the allspice with cinnamon, nutmeg, and sugar. When the base is ready, add the filling and bake for 40mins. Voila!
Pumpkin Pancakes are just as delicious as they sound and can be enjoyed morning, noon, or night, throughout the fall season: just the thing to alleviate the lockdown blues. As with all pancakes, these ones are incredibly simple to make, but they contain a pumpkin twist. Combine flour, sugar, (white and brown) baking soda, salt, pumpkin puree, cinnamon, allspice, and one egg in a large bowl. Mix it all together until you have a mix, then pop some on the frying pan.
Along with pumpkins and dates, apples are also widely available at this time of year and find their way into some memorable recipes. Not least of all Apple Pie Cider, which combines the best of both worlds – that is dessert and after-dinner drink. Hot apple pie cider could not be more simple to make, all you need are the ingredients, and a large pot combine the apple juice, sugar, cinnamon sticks and proof alcohol in the pot and bring to boil. After it’s boiled, switch off the heat. Let it cool and drink from a hearty stein.
Hasselback Sweet Potatoes is one you won’t want to miss this Thanksgiving. It’s a diced sweet potato dish covered with mouth-watering herbs, butter, and spices. Easy to make and unmissable on this year’s Thanksgiving table, you won’t be sorry you gave it a try. To make it, you will need large sweet potatoes, honey, Dijon mustard, rosemary, cinnamon, nutmeg, black pepper, chilli flakes, ghee, pecans, and parsley. Follow the blue link for a full recipe guide.
