1/4 cup chopped pitted black olives (I used two small cans I had already chopped)
2 teaspoons thyme (I used the spice, but fresh Thyme would probably be better)
Optional: Salt and pepper to taste
Directions:
Preheat oven to 425°F.
Brush a 9-by-13-inch baking dish with 1 Tbsp. olive oil.
Mix olives, tomatoes, onions and Thyme in a bowl.
Lay mixture all over bottom of baking dish and place fish on top, skin side down.
Top fillets with remaining mixture and anymore Olive Oil you’d like. Season fish with salt and pepper and cover loosely with foil. Bake until fish is flaky and firm, about 25 minutes.
Notes:
Next time I will probably add Capers or Green Olives for a salty flavor and more texture, since i don’t like to use regular salt.

It looks beautiful!! I love the sound of the ingredients. I love capers too. I have made fish with a jar of salsa on top with sprinkled cheese and it is really good too.
