Ingredients:
Directions:
Remove kernels from corn into large bowl.
Add potatoes, tomatoes, green beans, bell pepper, cilantro and garlic.
Prepare vinaigrette – Combine lime juice, olive oil, salt and pepper in small bowl or shaker.
Stir in vinaigrette and let dish sit for at least one hour in the fridge.
I like to serve this with tortilla chips. Would also be good on tacos!
