Ingredients:
- 6 ears sweet corn
- 3 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon Kosher salt
- 1 teaspoon black pepper
- About 2 cups diced and cooked small potatoes
- About 2 cups peeled, seeded and finely diced plum tomatoes
- About 1 cup blanched green beans, cut
- 1 bell pepper, any color
- 1 tablespoon minced garlic
- 2 teaspoons chopped cilantro
Directions:
Remove kernels from corn into large bowl.
Add potatoes, tomatoes, green beans, bell pepper, cilantro and garlic.
Prepare vinaigrette – Combine lime juice, olive oil, salt and pepper in small bowl or shaker.
Stir in vinaigrette and let dish sit for at least one hour in the fridge.
I like to serve this with tortilla chips. Would also be good on tacos!
