Recipe: Baked Potatoes a la Mrs. Dash

After being diagnosed with high blood pressure and just trying to eat healthy while I was pregnant, I knew I had to cut back salt in my diet.  There are just so many yummy foods that I use salt on.  Luckily Mrs. Dash kept me going this summer through all of our barbecues.

My favorite side to use Mrs. Dash on is potatoes.  Whether we are just putting on whole baked potatoes on the grill or I am cutting them up and baking them, I love Mrs. Dash on them.  It is the perfect salt substitute.  My husband has also been hooked on trying the different seasonings on his hamburgers.

With 14 different flavors you could have 14 different versions of the same meal – so far I have tried Garlic & Herb, Caribbean Citrus, and Southwest Chipotle on our potatoes!  I love them all!

All summer meat and vegetables have never been the same and I really don’t even think I could go back to boring old salt.  Not only does Mrs. Dash satisfy that salt-like craving but it also flavors my meals.  Even if salt is not a concern in your diet, why not enjoy the extra flavors and try something new!

Baked Potatoes a la Mrs. Dash

Ingredients:

  • Vegetable Oil
  • Mrs. Dash Seasoning of choice
  • Potatoes

Directions:

Mix oil, Mrs. Dash, and cut up potatoes in a bowl (or bag) then bake at 400 degrees for 20 minutes.

Broccoli with Shaved Cheddar
Serves: 4
Prep Time: 10 min
Cook Time : 35 min
Ready In: 45 min

Ingredients
2 Tbsp. Mrs. Dash® Original Blend
2 cups fresh broccoli, cut into 3 inch pieces
1/2 lemon, squeezed
1 Tbsp. olive oil
2 Tbsp. cheddar cheese, shredded
cooking spray

Directions
1. Preheat oven to 325° F. Spray 9 x 9 x 2 inch pan with pan coat.
2. Toss first four ingredients in bowl Set cheddar cheese aside.
3. Lay broccoli mix in pan. Roast in oven for 30 minutes.
4. Remove from oven, sprinkle with cheddar cheese. Return to oven until melted. Serve.

Sweet Potato Chicken Skillet
Serves: 4
Prep Time: 6 min
Cook Time : 16 min
Ready In: 22 min

Ingredients
2 Tbsp. Mrs. Dash® Caribbean Citrus Blend
4 boneless, skinless chicken breasts
2 sweet potatoes, medium size, cut into 12 wedges each
3 Tbsp. olive oil

Directions
1. Heat a cast iron skillet to medium heat. Add 1 1/2 Tbsp. olive oil.
2. Toss in sweet potatoes and brown on all sides for 1 minute. Remove to a plate.
3. Add remaining olive oil and brown chicken on both sides. Return sweet potatoes to pan and sprinkle with Mrs. Dash® Caribbean Citrus Blend. Cook 10-12 minutes, toss and serve.
