Place the olive oil and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish, salt and pepper to taste.

Oh man, I LOVE roasted cauliflower! My mom does a mix of roasted veggies in the oven along with some sort of protein in the mix and boy oh boy is it good!
