With the weather being crazy here and me being cooped up in the house, I have started spring cleaning like crazy. Our schedules are starting to wind down from busy Fall/Winter sports, but that doesn’t mean our schedules are completely calm. Oh and I had time to fill a bag to donate and clean my sink! Woohoo for the little things!

What did we have for dinner?

Prep took maybe five minutes and dinner was ready in less than an hour. I was going to make Chicken Parmagiana Patties sandwiches like I did for the Salisbury Steak Sandwiches but my kids wanted pasta. My picky, food allergy filled 9-year-old had two patties and asked that we have it again the next night!

I would definitely say to double the recipe depending on how many you are cooking for as in my family, each person wanted two patties – so it served basically three people.
