Feeding America is a nationwide network of food banks leading the fight against hunger. I think those are great brands to partner together for a great cause at a perfect time. I think during the holidays so many get wrapped up, myself included, that we sometimes forget about slowing down and enjoying the holidays, our friends and family, and being thankful for what we have.
Well this holiday season I am definitely slowing down (well I am going to try at least) and showing my family how much they mean to me. One way I show I care is through meals I host at our house. I go all out from serving dinner on our wedding china to creating a bunch of new dishes each holiday meal. Pinterest and me are like buddies.
Anyways, back to the Dish Up the Love campaign. Basically you submit a recipe that helps Dish Up the Love with your friends and family and your entered for a chance to win a trip or other great prizes from the fabulous sponsors – Baker’s Secret, Pyrex and CorningWare! Not only will you get a chance a winning but for every entry received they will donate $1 to Feeding America! The $1 will then help provide about 9 meals to local food banks from Feeding America!
Here’s how the program works:
- Cooks and bakers can post their recipe, family story about the dish and photo (optional) on WorldKitchen.com/dish-up-the-
love or Facebook.com/BakersSecret - Dish Up the Love will donate $1 up to $50,000 to Feeding America for every recipe shared
- Each recipe shared will be entered into a weekly sweepstakes to win a suite of Baker’s Secret, Pyrex and CorningWare products weekly
- Chef Antonia Lofaso will select the winning recipe and accompanying story
- The winner will receive the grand prize trip for two to New York City during Valentine’s Day weekend and a suite of Baker’s Secret, Pyrex and CorningWare products
So here is my go-to holiday recipe, well one of them:
Recipe: Roasted Cauliflower with Cranberries and Crispy Onions
Ingredients:
- 1 large head cauliflower
- 3 tbsp. Extra Virgin Olive Oil, divided
- 1 tsp. Salt
- 1/2 tsp. Ground Black Pepper
- 1/2 cup French Fried Onions
- 1/2 cup Dried Cranberries, divided
- 8 oz. Ricotta Cheese
Instructions:
- Preheat oven to 375°.
- Cut cauliflower into bite sized florets. Place on a large baking sheet and toss with 2 tablespoons olive oil, salt, pepper and 1/2 cup French Fried onions.
- Bake for 18 minutes or until cauliflower reaches desired tenderness and onions are brown and crispy. Then remove from oven.
- In a small bowl, combine ricotta cheese with 1 tablespoon olive oil, salt and pepper to taste.
- In a medium bowl, toss warm cauliflower mixture with dried cranberries. Spoon ricotta mixture on top and fold gently, leaving large bits of ricotta.
- Garnish with cranberries and crispy onions. Serve immediately.
Notes:
- This reheats well in the microwave for leftovers.
- For a big holiday dinner, you may want to double the recipe.
- You could also add in some nuts if you’d like.

Mashed potatoes – take and peel about 4 pounds of potatoes and cook them until fork tender. Put them in bowl of stand mixer and add 1 stick of butter and mix slowly until the butter is melted/incorporated; add slowly about 1/2-2/3 can of evaporated milk slowly along with about 1/2 cup of whip cream (we use about 36% fat) and mix; add about 1-2 tsp salt and 2 tsp black pepper. Beat it until mixed thoroughly and potatoes are whipped with no or minimal chunks left. Definitely not low fat, diet or anything else but good.

We love Pineapple Au Gratin for the holidays.
1 – Med can chunk pineapple, drained
1/2 cup sugar or Spenda
3 Tbs flour
1 cup grated cheddar cheese
24 Ritz crackers
1/2 stick margarine
Mix pineapple, sugar, flour, cheese. Put in greased casserole dish. Crumble crackers, mix with margarine. Sprinkle on top of Pineapple mixture. Bake 30 minutes at 350 degrees.
AWESOME hot or cold!

Besides the big dinner my family loves my cheesy potatoes and they go so well with ham if you dont have time to make scalloped potatoes. Its frozen hashbrown patties topped with pats of butter and shredfed cheese, layer again, half covered with milk and cooked until the cheese is golden brown. Cheap, delicious and easy!
