Barbecue Chicken Packets
Ingredients:
- 4 boneless skinless chicken breasts
- 2 cups Barbecue Sauce
- 1 pkg. (10 oz.) frozen corn
- 2 cups chopped bell peppers
Directions:
- HEAT grill to medium-high heat.
- SPRAY aluminium foil sheets.
- PLACE 1 chicken breast in center of each of 4 large sheets heavy-duty foil; top with remaining ingredients.
- FOLD each foil sheet to make packet. I then wrapped it again in another piece of foil to keep it better contained.
- GRILL 12 to 15 min. or until chicken is done (165°F). Cut slits in foil to release steam before opening packets.

This sounds like a great new recipe for me to try. Hubby and I are looking for new recipes. Sometimes you get stuck in the menu slump of the same dinners on the menu week after week. We make great dishes but the same thing over and over gets boring. This is different and looks really yummy. I like that this is on the grill and seems like there would be very little clean up. I could see adding another type of sauce and different veggies. I think sweet and sour sauce would be good too.
