Oven-Baked Zucchini Fries
Ingredients:
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese (I used the one in the plastic container, not fresh)
- 2 teaspoons Italian-like seasoning (I used Mrs. Dash because that is what I had on hand)
- 1 teaspoon garlic powder
- 1/2 cup milk
- 3 medium zucchini, cut into fry-shaped strips
- Ranch dressing for serving, optional
- Salt and Pepper, to taste
Directions:
- Preheat oven to 425F. Line a baking sheet with parchment paper. Set aside.
- Combine bread crumbs, cheese, and seasonings in one bowl. Then pour the milk in another bowl.
- Dip zucchini strips first in milk, then coat in the crumb mixture. Place fries on your baking sheet and bake at 425F for about 20 minutes or until fries are crispy and golden-brown.
- Cool fries and serve with ranch dressing if desired.

These look really good and really something the family would eaat. I havent ever oven baked them bbefore and yours look terrific. I garden and other gardeners give me zuccinn all thee time they grow like mad! I can grrow tometillos and most cant so end up with other produce ffrom those wanting them .

These are SoOo dang yummy! We still have a family movie night at least once a month, usually twice. My girls are married with 2 kids each- my son is single. As you can imagine I have lots of bellies to fill. I made these for a family movie night along with our usual cheese sticks & other snack food, every single piece of Zucchini was eaten while for the 1st time ever, there were cheese sticks left over!

I absolutely love Zucchini. It is one of my favorite veggies. I make zucchini chips, baked zucchini, cut it up with other veggies and cook it in olive oil and garlic, I make zucchini pie, bread, etc. but I have never made zucchini fries. My standard way to serve zucchini is by sautéeing slices in butter and olive oil. Your recipe would be a great change from that, and more healthful, too, without all that added fat. Thanks for sharing!
