    My America’s Better Sandwich Creation & a $25,000 Contest!

    Soups, salads and sandwiches are my favorite lunch items. I do have my favorites though and they are pretty simple. For example, I am not a big condiment fan and usually stick to just lunch meat and bread. Lately though I have been trying to expand my horizons and experiment with my creations.

    So I was challenged to come up with a sandwich creation and since I knew it couldn’t be boring, I knew it would be a challenge for me. I started with the bread, Brownberry® Bread to be exact, since that is the most crucial piece to the sandwich.

    Why did I choose Brownberry® Bread?

    Well first off I am bias towards bread as I love whole wheat so I had to go for the 100% Whole Wheat Whole Grains Bread.

    Next I noticed three things that were boldly printed on the front of the bag: 46g Whole Grains per 2 slices, 5g of fiber per 2 slices and no high fructose corn syrup. So basically it is delicious bread that is packed with goodness!

    What about the recipe I created?

    Well every Christmas I make these little cucumber sandwiches on rye bread with cream cheese. When I saw the Brownberry Whole Grains Bread I immediately thought of those sandwiches and figured why couldn’t I use that cream cheese spread on a sandwich?

    Salami and Dill Cream Cheese Sandwich

    Ingredients:

    • Brownberry Whole Grains Bread
    • Salami
    • 4 stalks of green onions
    • 8 oz. cream cheese
    • 2 tablespoons Dried Dill weed (or fresh if you have it)
    • 1 tablespoon minced garlic (or fresh if you have it)

    Directions:

    • Dice green onions.
    • Mix green onions, Dill weed, cream cheese and garlic.
    • Spread on bread and top with salami.

    • “Breakfast in Bread” (these sandwiches, featuring nutrient rich breakfast favorites like eggs and yogurt, invoke images of cozy mornings in bed or boisterous brunches with friends);
    • “Creative Classics” (nutritious spins on sandwich creations that have stood the test of time, such as grandma’s club sandwich, BLT or other old-time favorites);
    • “Fueling Good”  (these sandwiches should incorporate ingredients that help boost your energy such as healthful fats, protein, fiber and iron)
    • “State Favorites” (whether it’s a well-known sandwich in the state you reside, or a must-have local dish that can transition into a sandwich, celebrate your state pride by re-creating these state favorites with better-for-you ingredients)

    Entries are accepted through August 21st, with online consumer voting taking place September 26th – October 23rd. Winners are announced on National Sandwich Day – November 3rd.

    To encourage more sandwich entries, Brownberry® bread will donate one (1) loaf of bread (up to 100,000 loaves) to Feeding America for each valid entry submission during the entry period and vote received during the online voting phase of the “2016 America’s Better Sandwich” Contest.

      My favorite sandwich is simple, but good. It starts with good bread (duh) spread with a little butter, then filled with lightly salted sliced leftover roast chicken. Mmmmm.

      This week we were on a BLT kick, very simple with romaine lettuce, tomatoes, and vegan bacon for me (regular bacon for my husband). He likes mayo on his but I prefer my bread naked.
