My boys and I love tomatoes and our favorite way to eat them is diced up and in homemade chili. When I was pregnant with my first son, I decided I wanted Chili even though I had never had it before. I found a recipe and changed it up so it was mine and ever since I have been making it. Even though Chili is more of a winter dish, I can eat it anytime although I admit it is the best on a very cold day! With the Kidney Beans and Tomatoes, this Chili has some definite health benefits as well as tasting delicious!
Chili
Ingredients:
- 1 lb. lean ground beef
- ½ medium sized onion (chopped)
- 2 tablespoons Minced Garlic (or use a clove if you’d like)
- 1 (14 ½ ounce) can Hunt’s Diced Tomatoes, undrained (any variety)
- 1 can (8 ounce) Hunt’s Tomato Sauce
- 1 ½ tablespoon Chili Powder
- ¾ tablespoon Ground Cumin
- 1 can (15 ounce) Kidney Beans, rinsed and drained
- Salt and Pepper to taste
Steps:
1. Cook Beef, onion, and garlic over medium heat until ground beef is browned. Stir occasionally and drain.
2. Stir in remaining ingredients except Kidney Beans. Heat to boiling. Cover and simmer for 1 hour, stirring occasionally.
3. Stir in the Kidney Beans. Heat to boiling, reduce heat to a simmer. Cook for 10 minutes uncovered.
Obviously add more or less of the ingredients if you want more or less spice or flavor. The way I make it is not spicy at all (believe me I’m a wuss when it comes to spicy!) My husband adds Red Pepper to his for a more spicy side. I also love to change it up with the different Hunt’s Diced Tomato’s varieties since there are so many different types to choose from! It is great too that Hunt’s offers a No Salt Added version since I am supposed to be cutting back on my sodium intake.
I serve the Chili over whatever noodles I have on hand and top with Green Onions, Oyster Crackers, Cheese, and sometimes Sour Cream.
