INGREDIANTS:
- 1 lb ground beef
- 1 can (15 to 16 oz) spicy chili beans in sauce, undrained
- 1 can diced tomatoes, drained (or you could use chunky salsa)
- 1 cup shredded Cheddar cheese (4 oz)
- 1/2 onion, diced
Optional:
- Lettuce
- Tomatoes
- Green Onions
- Quesadillas (tortillas and cheese) or Tortilla Chips
DIRECTIONS:
Heat oven to 350°F.
Cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in beans, diced tomatoes and onion. Heat to boiling, stirring occasionally.
In ungreased 2-quart casserole, pour in beef mixture. Sprinkle with toppings: green onions, tomatoes and shredded cheese.
Bake uncovered 20 to 30 minutes or until cheese is hot and bubbly. Arrange tortilla chips or quesadillas around edge of casserole. Serve with lettuce and additional salsa.
