Garlic Shrimp and Noodles
INGREDIENTS:
- 1 pkg cooked Creamette Egg Noodles
- 2 tbsp olive oil
- 3 tsp garlic, minced
- 1-1/2 lbs small shrimp, cleaned
- 1 cup green onion, chopped
- 1 tbs parsley, chopped
For the dressing:
- 1/2 cup of olive oil
- 1 tsp of garlic
- lemon juice from 1 lemon (I ended up using 1.5 lemons as 1 lemon wasn’t enough)
- 1/2 cup Parmesan cheese (I used grated because that’s all I had but you can use fresh parmesan)
DIRECTIONS:
Cook pasta according to directions, set aside.
Sauté 2 tbsp of olive oil over medium heat.
Add 3 tsp of garlic and saute about 1 minute.
Add the shrimp and cook until pink and thoroughly cooked.
Let the shrimp cool off.
Combine pasta with cooled shrimp.
Top with green onion, the dressing (mixed from the ingredients above) and parsley.
Let cool in refrigerator about 1/2 hour for the salad to season!
First I had to choose which size noodles, I ended up choosing Medium Egg Noodles for this dish.
