Roasted Brown Sugar Sweet Potatoes
Ingredients:
- 1/4 cup vegetable oil
- 2-3 pounds sweet potatoes, peeled and sliced into cubes
- 1 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons butter
- Dash of salt and pepper depending on taste
Directions:
- Preheat the oven to 375 degrees F.
- Pour the oil into a 9×13 inch baking dish, and place in the oven until hot, about 5 minutes.
- Add potatoes to the oiled dish, and bake for 20 minutes in the preheated oven, turning after 10 minutes.
- In a small bowl, mix together the brown sugar, cinnamon, salt, and pepper.
- After the 20 minutes is up, remove the potatoes from the oven, and mix in the brown sugar mixture.
- Stir to coat. Return to the oven, and roast for another 10 minutes, or until potatoes are tender and golden brown. Stir potatoes to brown evenly.

I really like my sweet potatoes with brown sugar and a thickened syrup. Sometime you can add a little bit of chopped apples to them to or if you like topped with marshmellows

Mmm … these look seriously yummy. I don’t use butter but I was thinking that I could just eliminate it or even replace the oil, butter & brown sugar with maple syrup. Do you think that would work? Thanks for sharing … the pictures are making me drool!
