Baked Donuts with Chocolate Glaze
Ingredients:
- 1 cup all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/3 cup granulated sugar
- 2 tablespoons unsalted butter
- 1 large egg (or egg replacer which is what I use since we have an egg allergy in the house)
- 1/2 cup buttermilk (or 1/2 Cup regular milk mixed with 1 Teaspoon vinegar – let sit for 5 minutes)
- 1 teaspoon vanilla extract
The above ingredients make six donuts, I doubled to make 12 donuts.
Ingredients for the Chocolate Glaze:
- 1 1/2 cups powdered sugar
- 4 tablespoons unsweetened cocoa powder
- dash of salt
- 2 to 4 tablespoons milk (start with 3 and then more to get the consistency you want)
- 1 teaspoon vanilla extract
Directions:
- Preheat oven to 350 degrees F. Lightly grease your donut pan. (I orded my donut pan from Amazon for just under $8.)
- In a medium bowl, mix together flour, baking powder, baking soda, salt, nutmeg, and sugar. Set aside.
- In a small saucepan over medium-low heat, melt butter. Once butter is done crackling, remove from heat.
- Mix in the egg, buttermilk, and vanilla extract with the butter. Then add the wet ingredients to the dry ingredients. Stir until everything coated, but don’t over mix.
- Drop spoonfuls of batter into your donut pan. Fill until just under.
- Cook for 8 to 10 minutes then remove to cool. I placed them on a wire rack so I could fill the tray again to make 6 more donuts.
- While the doughnuts cool, make the chocolate glaze.
- To make the glaze, mix in a medium bowl all the ingredients above for the chocolate glaze (powdered sugar, cocoa powder, salt, milk and vanilla.)
- Once the donuts are completely cool, dip top-side-down into the chocolate glaze. Return to the wire rack and sprinkle with toppings. You do want to let the glaze cool off on the donuts as it will harden and not be so messy!
