Ingredients:
- 1 whole bag of small potatoes (any variety- I used Tasteful Selections)
- 2 tablespoons minced garlic
- 2 whole peppers
- 1 cup bacon (I used the bags of fresh bacon bits)
- 1/2 onion
- Olive oil
Directions:
- First rinse of the potatoes if needed and toss them in a baking dish with some olive oil (I put them in a bowl first but why dirty up extra dishes!)
- Then add everything else (minced garlic, peppers, onions, bacon)
- Cook for 20 minutes at 425, midway stir it up so they cook evenly
Notes: As will all my recipes, feel free to modify them according to your tastes. Want more bacon? Then add some! Don’t like garlic? Skip it!

I love this recipe. Similar to the one I make. I take foil, pull off about a foot for each person. I make separate pouches for each person. I cut the potatoes in to large pieces, add the bacon, peppers, onions, and garlic. Spray with Pam spray. Then put a pat or two of butter in each bundle. Sprinkle on some italian seasoning, some season salt, and fold over the foil. Bake until tender in a 350 degree oven. Love them! Depends upon the dinner, sometimes I will serve in the foil also (less mess). You can also make these on the grill just make sure you have olive oil in the bottom of the foil, and I use 2 layers for the grill.
