INGREDIENTS:
- 1 head cauliflower, cut into florets
- 1 tablespoon olive oil
- 6 ounces cream cheese, room temperature (or the whole bar for a creamer taste)
- 1/2 cup sour cream
- 1 tablespoon thyme (I used powdered but you could use fresh)
- 1 tablespoon garlic powder (or you could use fresh garlic)
- 1 cup aged white cheddar
- salt and pepper to taste
DIRECTIONS:
Toss the cauliflower in the oil with salt and pepper, arrange in a single layer on a baking sheet and bake at 400F until lightly golden brown, about 20-30 minutes.
Puree cauliflower and the rest of the ingredients in a food processor and pour into a baking dish.
Bake at 350F until the top is lightly golden brown, about 20-30 minutes.
