I have always been a night owl and actually I am a lot more productive at night than I am in the morning. Don’t get me wrong I can get up early and function if I need to, but I am sometimes just going through the motions. Some people swear by coffee in the morning but I have never been a fan of hot drinks. Iced drinks though is another thing. It’s pretty fitting too because even if I did like hot coffee, by the time I got around to actually drinking it, it would be cold anyways.
From the time I wake up in the morning to the time I get two of my kids on the bus, I am like a crazy person bouncing through the house to get everything done. Once they are on the bus, I still have my 4 year old at home with me that only goes to school for 2.5 hours. So really I don’t get a lot of me-time, which is another reason I stay up late (after the kids go to bed.)
So how do I treat myself without breaking the bank and in just minutes? I whip up some Iced Coffee using Instant coffee Crystals! Why Instant Coffee Crystals? Well then I don’t have to wait for a whole pot to brew if I’m in a hurry and if I just want one cup. I used to brew a whole pot and then I either drank the whole pot (which I didn’t need to do) or I wasted most of it.
Iced Coffee using Instant Coffee Crystals
Ingredients:
- 3 tablespoons of Folgers instant coffee
- 1 cup boiling hot water
- 1 glass of ice
- Sugar to taste (I used 1/4 cup)
- Milk to taste (I used about a cup)
Directions:
- Mix in Folgers Instant Coffee Crystals with boiling hot water.
- Add in sugar and milk.
- Pour over a glass of ice.
Notes:
You could also top with whip cream, but I didn’t have any.
Like flavors? Stir in some coffee syrup flavoring.

Very much like Thai Iced Coffee — only differences are, that they use strong brewed coffee &
Condensed milk for sugar & lightening. I love iced coffee cafe Au lait style but without sugar. A dairy allergy means using nondairy alternative milks. One suggestion, have you tried making coffee ice cubes? They keep your coffee cold & undilulted.
