With the weather being crazy here and me being cooped up in the house, I have started spring cleaning like crazy. Our schedules are starting to wind down from busy Fall/Winter sports, but that doesn’t mean our schedules are completely calm. I have been trying slowly to squeeze in cooking dinner along with homework and spring cleaning. The last thing I want to do to is spend time preparing and cooking when I could be cleaning, yes I’d rather clean than cook!

I also decided to put all of our Vitamin C drops in a nice glass drawer rather than scattered in our drawer. With my kids not big into vitamins or supplements, I am happy that they are at least getting some Vitamin C in them thanks to the convenience of the jar on our counter.
Oh and I had time to fill a bag to donate and clean my sink! Woohoo for the little things!
What did we have for dinner?
From hearty entrées to microwave favorites, convenience has never tasted so delicious. No frills, no fancy. Just really good food! I popped the 6 Breaded Chicken Parmagiana Patties with Tomato Sauce in the oven, boiled up some spaghetti and microwaved green beans.
Prep took maybe five minutes and dinner was ready in less than an hour. I was going to make Chicken Parmagiana Patties sandwiches like I did for the Salisbury Steak Sandwiches but my kids wanted pasta. My picky, food allergy filled 9-year-old had two patties and asked that we have it again the next night!
The 6 Breaded Chicken Parmagiana Patties with Tomato Sauce comes with six white meat chicken patties layered with real mozzarella cheese and savory tomato sauce. I would definitely say to double the recipe depending on how many you are cooking for as in my family, each person wanted two patties – so it served basically three people.
